Confession: I Struggle to Nourish My Family (& a Giveaway)

I fall short when it comes to meal preparation and execution. It's something I have had in the back of my mind as a goal to work on for years. I think it remains at the back of my mind most of the time because it's something I just don't find fun. I have friends and family members who love to cook (thank goodness I married one of them!), so I know that it's possible to enjoy it, but I have yet to find that joy when it comes to meals & nutritional foods (dessert-prep and baking on the other hand- the joy has always been right there in front of me & I'm happy to get right into that! ;)

I do, however, manage to make meals ;)  I keep nutrition in mind and attempt to make healthy meals as often as possible. I have a few "staple" meals that I come back to that I know I can make well.  These include lasagna, shepherd's pie casserole, chicken & rice casserole, tacos, and some others. You'll notice that the majority of those involve ground beef- & has anyone else noticed how expensive it has gotten lately? We're pretty frugal so I've been trying to think of other things to cook with!

Another thing that I try to do is to have healthy snacks around (particularly fruits & vegetables). This is definitely a challenge this time of year, since we live in THE ARCTIC (well, not really, but it feels that way..) and fruit and vegetables do not grow around here, this time of year.

So, I do my best at nourishing my family even though I know that I'm not really doing awesome a lot of the time, and I have vitamins around for myself, my husband, and my kids to help make up the difference. We just started using Life Science Nutritionals' Gummy vitamins and we are big fans!  My kids were already using Gummy vitamins but I had never tried gummy vitamins for adults! You guys, I'm supposed to be taking a multivitamin daily (my doctor told me to), but have you seen the size of some of those pills?! I dread taking them (therefore I don't take them). I was pretty excited to try out a Gummy vitamin that's actually formulated with women's nutritional needs in mind (cuz eating the kids' vitamins didn't seem sufficient and I felt bad for using them up... ahem.)

  2. I do struggle with meal prep - i tend to rely too much on frozen, prepared meals, at least in part. I don't seem to have the time, thought, or energy to prepare a meal from scratch at the end of the day. I also struggle with housework...

  4. We started buying meats at Costco, much cheaper than even some of the "sale" prices. And to cut the price back more we just use ground pork!
    However I too am in the not especially great with dinner prep and execution club.....at times even falling back on pancakes as a dinner. I do have dishes I like to make, I just worry about "over using" them, but I am sure even that would be better than pancakes nutrition wise.

    1. Aw man, and we just got rid of our Costco membership (to try and cut costs since I hardly ever make it out there to shop ;) We do pancakes for dinner here, too :)

  8. I do okay in terms of meal prep but do find that I struggle at times trying to keep the laundry caught up, I swear I can never find the bottom of the hamper some weeks. (Judy Cowan)

  14. Honestly I never seem to have time, my husband usually takes care of it because he's unemployed right now, but there are sometimes where we just have to hot dogs and KD because we're so tired or not prepared.

  16. Meal prep used to be a struggle, but over the years I've learned to manage my time better, and prepping things ahead like chopped/sliced veggies to have on hand, as well as certain meat is a huge time saver.

  17. Meal prep is absolutely my biggest struggle. I am terrible at getting organized, having a stocked fridge etc. If I could hire a chef I would. We eat a lot of pasta because it is quick and easy and I usually have the items to throw some kind of pasta dish together at the last minute.

  18. My favourite easy meal to make for my family is a homemade mac and cheese with mushrooms. Sometimes I add peas too. It is super quick to whip up, and only takes 20 minutes to bake. It's what I make when the day gets away from me and I have no time for anything else. Luckily my family really likes it.

  19. My favourite easy meal to make for my family is stir fry. Usually beef but it will have lots of vegetables so even though it's easy I can feel good about it.

  26. I always have bottled food on hand like soups,stews,chili,beans and Spaghetti sauce, so we can chose what we feel like eating if there is no cooked meal

  29. I always struggle with meal time. Trying to come up with ideas of what to make, keep it interesting. Then the time to prep and make at the end of a day so we can eat at a decent time

  34. I struggle with finding foods my picky son will eat. He has texture issues with fruits and vegetables so it can be really hard to serve veggies.

  40. Hi, Heather! I'm so excited I found your blog! I have a hard time nourishing my family too. I have 3 picky eaters, which makes feeding them healthy food so hard! I will have to look into getting them these vitamins. Thank you for sharing!

  41. Oh also, my kids LOVE to eat Hawaiian Haystacks. I can even get them to eat tomatoes and green peppers during that meal, which is a huge thing for my kids! :) we also love breakfast for dinner.
