Gooey Marshmallow Brownie Recipe

We're still staying in a lot and entertaining ourselves at home so it feels like the perfect time to re-share this marshmallow brownie recipe! Brownies have been a repeated treat for us over here ever since this pandemic hit! We've been making microwave mug brownies pretty often, Talia found a homemade brownies-from-scratch recipe with frosting that she has perfected, and recently we pulled out a brownie mix and added some mix-ins. I noticed this marshmallow brownie topping idea on my blog from exactly 3 years ago to the day, and thought it needed to come to the front of the blog again! ;)

All you need are some marshmallows and chocolate chips to take your regular brownies from good to amazing! I'm impressed by how the marshmallow layer on top of these brownies stays soft even after the brownies are cool. We love adding some extra deliciousness to a simple brownie mix!


Marshmallow Brownie Recipe

Ingredients:


Brownie Mix & required ingredients
(our mix calls for vegetable oil, water, and an egg)
Marshmallows
Chocolate Chips



Instructions:


Start by following the instructions for your brownie mix. (For ours, we mixed together our egg, water, oil, and dry mix)


This is the perfect time to get your kids helping. They love to stir at any age!


Add some chocolate chips into your mix, if you like a little melted chocolate throughout your brownies. Then put your brownies in the oven and bake according to the directions for your mix.

When your brownies are finished baking, test them with a toothpick. If it comes out clean, they're ready for marshmallows!  Sprinkle as many marshmallows on top as you like (we like to do one full layer of marshmallows to cover the surface).

Then sprinkle some chocolate chips on top of the marshmallows & put them back in the oven for around 2 minutes, to allow the topping to melt.


This is a fun part for your kids, too. Let them watch the marshmallows puff up as they're heated in the oven and task them with letting you know when the chocolate chips start to look shiny & melty!

All that's left to do after that is to sample your creation!  My kids liked eating them warm with a scoop of vanilla ice cream.

  2. These look so good. Will have to make these with the kids, they'll love them! We always like to experiment with toppings and extra add ins when baking and cooking.

  3. We have actually tried to add them to the mix and bake but we added them right in the mix and it didn't work at all. So apparently the trick is to put them on top! Who knew? Not sure why we didn't think of that.

  4. You know what I'd do with these? I'd pre-cut them into squares then sandwich the brownies between graham crackers around the camp fire ... maybe even heat them up a bit by wrapping in some tinfoil on the barbecue?! Because these would be even more delicious than s'mores.

  22. I love that these are so simple! I have made almost this exact recipe, only I press down graham crackers broken into rectangles on the top. Then I cut along the graham crackers and it's a s'mores brownie! :)
