Brownies with marshmallows on top are one of the easiest ways to turn any brownie — homemade or a box mix — into something bakery-worthy.
This marshmallow topping trick takes just two extra ingredients and about 2 minutes of extra oven time, and it works no matter what brownie recipe you're starting with.
The best part: the marshmallow layer stays soft and gooey even after the brownies cool completely, so you're not stuck eating them warm to get that melty texture.
How to Make Brownies with Marshmallows on Top
All you need to add this topping to any brownie recipe:
- Mini Marshmallows
- Chocolate chips
(Want to go even further? Try it with homemade marshmallows instead of store-bought.)
Start by making your brownies (whether from a box mix like ours, or your favourite recipe) and bake as directed. We love doctoring up a simple box mix — we did the same thing with this easy rainbow layer cake — and it's a great way to get kids helping, since they love to stir at any age!
Once your brownies are fully baked — test with a toothpick, it should come out clean — sprinkle marshmallows over the top. For an 8x8 or 9x9 pan, we do one full layer, enough to completely cover the surface with the marshmallows touching or slightly overlapping. Then scatter chocolate chips over that.
Put the pan back in the oven for about 2 minutes, just until the chocolate chips look shiny and melty and the marshmallows have puffed up. Watch closely — this step goes fast.
This is a fun part for your kids, too. Let them watch the marshmallows puff up as they're heated in the oven and task them with letting you know when the chocolate chips start to look shiny & melty!

All that's left to do after that is to sample your creation! My kids liked eating them warm with a scoop of vanilla ice cream.

DeleteWe have actually tried to add them to the mix and bake but we added them right in the mix and it didn't work at all. So apparently the trick is to put them on top! Who knew? Not sure why we didn't think of that.

DeleteYou know what I'd do with these? I'd pre-cut them into squares then sandwich the brownies between graham crackers around the camp fire ... maybe even heat them up a bit by wrapping in some tinfoil on the barbecue?! Because these would be even more delicious than s'mores.
