Summer Broccoli Salad ( #cbias )

One of my favourite things about Victoria Day weekend for me and for my family is the opportunity to get everyone together! We get to enjoy the beautiful weather (that we've waited so long for!) together.

In the past we have gathered in someone's backyard for a BBQ and games and visiting, followed up by roasting marshmallows- I love that! This year we're going to have my husband's sister and her kids in town- which is very exciting because they haven't been back to Canada since my other sister-in-law's wedding which was right after Katrina was born, so I wasn't in a position to run around and participate in everything!

I recently tried out a recipe that would be perfect to bring to a BBQ like that- it's a simple salad that could be brought along to a BBQ as a side, or added to with some grilled chicken or salmon.

I took Katrina with me to Loblaws' Real Canadian Superstore to pick out the ingredients (you can see more photos from our shopping trip here), and yesterday I got to work on trying out the recipe.



Let me remind you that I am not a big cook. This recipe was great because it needed minimal ingredients and the steps were really simple. :)

Here's what you'll need for this recipe:

1 bunch of Broccoli
2 stalks Celery Hearts thinly sliced
1 can (540 mL) PC Blue Menu Chickpeas rinsed and drained
2 Green Onions thinly sliced
1/2 cup PC Blue Menu Vinaigrette - Italian (can substitute Ranch dressing)



In the photos below you can see that I started by cutting the broccoli up into small bite-sized pieces.
I got them boiling while I sliced the green onions, and rinsed & drained the chickpeas.
When the broccoli was ready to go (rinsed in cold water & drained), I was ready to assemble the salad!



Once assembled, it's ready to take with you to a BBQ, with the dressing separate.




When it's time to eat it, divide it onto individual plates, add dressing and serve!
(or add some grilled meat and THEN serve :)

    I love this recipe because I have a special fondness for chick peas. :)

    1. haha Leslie, well we can make that journey together then! There is a reason most of the recipes posted here are desserts ;) I'm way more interested in baking than cooking! :)
