When I was at university, one of my roommates shared this healthy dip recipe with me and I have loved it ever since! This is actually the same roommate who taught me the Pumpkin Roll recipe! :)
So, back to the dip recipe... I love it because it's light and refreshing and just perfect to eat with Nacho cheese chips... uh.. yeah... I didn't say it was a completely healthy snack! ;) We made it just last night in preparation to share the recipe here on the blog and my husband came up with a delicious variation (which I will share at the end of the post), so stay tuned! :)
Here's What You'll Need:
(This makes quite a bit of dip, so you could half this recipe)
- 1 cucumber
- 4 green onions
- 1 large spoonful of mayonnaise
- 1 16 oz. (or 500g) container sour cream
- 1 16 oz. (or 500g) container of cottage cheese
(You can see that I bought the 750g container of cottage cheese, but that's just because we like to eat it plain too- it's a great healthy snack that's high in protein, low in fat, and a great source of calcium. Gay Lea's Nordica Cottage Cheese is also made from 100% Canadian dairy milk, so that's a bonus!)
These are all also great reasons/excuses for eating cheesey Doritos ;) haha But seriously, mixing something healthy in with a snack helps to remind me to eat the less-healthy things in moderation!
Here's What You Do:
1. Start by peeling & cutting the cucumber into small pieces.
2. Chop up the green onions
3. Mix the cottage cheese, sour cream, and mayonnaise together.
4. Add the cucumber & green onions and mix together.
5. That's it! Grab a nacho and dig in!
Mexican Variation:
My husband lived in Mexico for 2 years before we were married and has a love for Mexican tastes. We are both big fans of lime and cilantro, so I was happy to let him experiment with part of the dip and the variation he came up with was delicious!
I don't have specific measurements since he was experimenting, but you could try adding the following ingredients (to taste) and see if you like his variation as much as we did!
- fresh cilantro
- lime juice
- feta cheese
- chili powder

ReplyDeleteI have never added cottage cheese to dip before, but it's a great idea. Cottage cheese is high in protein, so it's another yummy way to add it in!
I love cucumbers but never thought to make a dip with!! YUM!! this looks so good! I love GAYLEA products so I can't wait to make this!
